LasagnaLasagna is a traditional Italian pasta dish. This hearty variation perfected by former neighbors of my parents is a true Minnesotan twist on an old-world favorite.

Recipe: Lasagna


  • 8 oz lasagna noodles
  • 1 lb. ground beef
  • 1 large jar pasta sauce
  • 1/2 cup onions, chopped
  • 1/2 cup mushrooms, drained
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 cups creamed cottage cheese
  • 1 cup Mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated


  1. Cook lasagna noodles as directed on package
  2. Brown beef with onions, mushrooms, salt and pepper
  3. In a 9x13x2 inch baking dish, alternate layers of 2 thicknesses of noodles, pasta sauce, cottage cheese, meat mixture and Mozzarella cheese, ending with pasta sauce
  4. Sprinkle 1/4 cup grated Parmesan cheese on top
  5. Bake at 350 degrees F for 1 hour
  6. Let stand 10 minutes before serving
