Italian Pork Chops

Italian Pork Chops are chock full of typical Italian herbs and covered with zesty tomatoes. This recipe is an excellent break from bland, uninspired meals — particularly during the winter months.

Recipe: Italian Pork Chops


  • 6 lean pork chops
  • Salt and pepper
  • 1-1/2 tbsp vegetable oil
  • 1 large onion, sliced
  • 1 (14.5-16 oz.) can tomatoes
  • 1 cup chicken broth
  • 1 large green pepper
  • 1-1/2 tsp salt
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • 1/4 tsp garlic powder
  • 1/4 tsp pepper
  • 1 tsp sugar (optional)
  • 1 cup uncooked rice


  1. Season chops with salt and pepper to taste
  2. Brown on both sides in oil in large oven-proof skillet
  3. Add onion, green pepper and saute lightly after chops have been removed
  4. Add rice and seasonings
  5. Place chops on top
  6. Mix chicken broth with tomatoes and pour over top
  7. Bake at 350 degrees F for 1 hour
