Hot Potato Salad

This hot potato salad recipe, also known as German potato salad, is made with bacon, potatoes, vinegar, mustard, and a little sugar.

Hot Potato Salad

American, Side
  • 6-8 medium potatoes
  • 1 tsp. salt
  • 1/2 cup celery
  • 4 wieners
  • 3 tbsp. onions
  • 1/4 cup green pepper
  • Bacon
  • 1/4 cup bacon fat
  • 1 tbsp. flour
  • 2 Tbsp. sugar
  • 1/2 tsp. salt
  • 1 tsp. dry mustard
  • 1/3 cup vinegar
  • 1/4 cup water
  • Cook and cube potatoes. Cook and cube wieners. Fry the bacon crisp and crumble. Mix potatoes, salt, celery, wieners, onions, green pepper and bacon. For dressing: To hot bacon fat add flour, sugar, salt and mustard. Blend and add vinegar and water and cook until thick. Pour over potato mixture. Serve hot or cold. If needed double dressing.
