Recipe: Ham Stuffed Potatoes

Ingredients

  • 6 baking potatoes
  • 3/4 cup diced ham
  • 1/4 cup chopped green pepper
  • 2 tbsp finely chopped onion
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 1/4 cup sour cream
  • 1/2 cup finely shredded Swiss Cheese

Instructions

  1. Bake potatoes at 400 degrees for about 1 hour
  2. Cut off top and scoop out hot potato with a spoon
  3. Break up potato with a fork
  4. Do not mash
  5. Combine hot potato, ham, pepper, onion, salt and pepper
  6. Add enough sour cream to moisten
  7. Pile mixture into shells
  8. Place on baking sheet
  9. Top with Swiss cheese
  10. Bake at 400 degrees 15-20 minutes or until golden
