Glazed Apple Creme Pie

  • 6 cups peeled, thin apple slices
  • 1/2 cup white sugar
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/8 tsp. salt
  • 1 tsp. lemon juice
  • 1 tbsp butter
  • 2/3 cup heavy cream
  • 2 pie crusts
  • Line pie tin with crust. Fill pie shell with sliced apples. Mix sugar, spices, salt, lemon juice and sprinkle over apples. Dot with butter. Moisten edge pie with water. Whip creme and spread it over apple filling. Cover with remaining crust and pinch crusts together and trim edges. Cut slits in top crust to let steam escape and brush with slightly beaten egg white and sprinkle with sugar. Bake in hot oven at 425 for 40-50 minutes. Serve warm.
