French Tomato Soup

When the gardens and farmers’ markets are bursting with fresh ripe tomatoes, make this French-inspired tomato soup flavored with basil, oregano, thyme, and other ingredients.

   Serves 6
  • 1 qt. milk
  • 3 cups tomatoes, diced and cooked
  • 1 tbsp. butter
  • 1/3 onion, diced
  • 1 tbsp. green pepper, diced
  • 2 tbsp. flour
  • salt and pepper to taste
  • Add tomatoes to milk and heat. Saute onion and pepper in butter until soft. Add flour to onion mixture then combine with milk and tomato mixture. Add salt and pepper. Heat. Serves 6
