Fluffy Potato Casserole

  • Put 2 cups mashed potatoes, hot or cold, in a bowl.
  • Add:
  • 1 8 oz. pkg. softened cream cheese
  • 1 small onion, finely chopped
  • 2 eggs
  • 2 tbsp flour
  • Beat mixture at medium speed with electric mixer until blended, then at high speed until mixture is light and fluffy. Add salt and pepper to taste. Spoon potato mixture into a 9” square baking dish. Sprinkle 1 3.5 oz. can French fried onions over top of mashed potato mixture. Bake at 300 degrees for 30 minutes. Serves 6.
