Filled Oatmeal Date Bars

Recipe: Filled Oatmeal Date Bars


  • 1 lb pitted dates, cut up
  • 1/2 cup sugar
  • 1 cup water
  • 1/4 cup lemon juice
  • 1/2 cup coarsely chopped nuts
  • 1 1/2 cup sifted flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup soft margarine
  • 1 cup brown sugar
  • 1 1/2 cup quick oats, uncooked


  1. Combine dates, sugar and water all in small saucepan, cook and stir over medium heat about 5 minutes or until mixture is thickened
  2. Remove from heat, stir in lemon juice and nuts and set aside to cool
  3. Sift flour with soda and salt
  4. At medium speed on mixer, beat butter and sugar until light and fluffy
  5. Add flour mixture and oatmeal, them mix with hand until well combined
  6. Press half the mixture evenly into lightly greased 13x9x1 1/2 inch pan
  7. Spread with cooled filling
  8. Cover with remaining oatmeal mixture, pressing lightly with hands
  9. Bake in preheated 375 degree oven for 25-30 minutes or until golden brown, cool slightly, them cut into bars while still warm
