Double Decker Brownies

  • Crust:
  • 1 cup oatmeal (uncooked)
  • 1/2 cup all-purpose flour
  • 1/2 cup firmly-packed brown sugar
  • 1/4 tsp. salt
  • 6 tbsp. butter (melted)
  • Brownies:
  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1 cup all-purpose flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. baking soda
  • 1 cup plain yogurt
  • 2 squares (1 oz. each) unsweetened chocolate, melted and cooled
  • Confectioners sugar
  • For crust, combine dry ingredients. Stir in melted butter until well mixed.
  • Press onto bottom of a 9 inch square pan. Bake at 350 for 10 minutes. Remove from oven; set aside. For brownies, cream butter and sugar until light and fluffy. Add eggs and vanilla; mix well. Combine dry ingredients; stir into creamed mixture. Add yogurt and melted chocolate; mix well. Pour brownie mixture over baked crust. Bake at 350 40 to 45 minutes or until a toothpick inserted into the center of the brownies comes out clean. Cool completely, then dust with confectioners sugar, cut and serve.
