Date Pinwheel Cookies

Recipe: Date Pinwheel Cookies

Ingredients

  • FILLING:
  • 1 cup water
  • 1 cup sugar
  • 1 tbsp butter
  • 2 cups dates, chopped
  • DOUGH:
  • 5 cups flour
  • 1 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp soda
  • 3 eggs, slightly beaten
  • 1 tsp vanilla
  • 1 cup shortening
  • 2 cups brown sugar

Instructions

  1. Combine water, sugar, butter, dates and nuts
  2. Cook until thick, stirring constantly to prevent scorching
  3. Remove from heat
  4. Allow filling to cool and then chill
  5. Sift together flour, salt, cinnamon and soda
  6. Combine eggs and vanilla
  7. Cream together shortening and brown sugar
  8. Stir in egg and vanilla mixture
  9. Add mixture to dry ingredients and blend well
  10. Divide this cookie dough into 4 parts and chill 2 or 3 hours
  11. After dough has chilled, roll out 1 part of dough on floured board to 1/4 inch thick
  12. Spread 1/4 of chilled filling evenly on dough
  13. Then roll up up to resemble jelly roll
  14. Proceed thusly for remaining dough and filling
  15. Place these rolls in refrigerator overnight
  16. Next day, slice each roll into slices about 1/2 inch thick
  17. Place slices on greased cookie sheet and bake at 375 degrees F for 15 minutes
  18. Remove with wide spatula
