date cookiesEven if you think you won’t enjoy dates, these date cookies will have you singing a different tune. Sweet and chewy, these delectable treats will melt in your mouth.

Date Cookies

  • 2 cups flour
  • 3/4 cup shortening
  • 1/2 cup brown sugar, packed
  • Pinch of salt
  • 1/2 pound cut up dates
  • 1/4 cup sugar
  • 1 cup water
  • 1/2 cup chopped walnuts or pecans
  • Mix flour, shortening, brown sugar and salt, add enough cold water to stick them together as pie dough. (The less the better)
  • Divide in half; roll out one half in 8x8 pan. Reserve other half.
  • Boil dates, sugar, water and nuts together for five minutes.
  • Spread mixture on first layer then roll out other half of dough and lay on top of date filling.
  • Bake at 375 degrees until brown on top and tests done with toothpick. Cut into squares.
