Recipe: Dark Fruit Cake

Ingredients

  • 2 lbs currants
  • 2 lbs raisins
  • 1/2 lb candied pineapple
  • 1/2 lb candied cherries
  • 1 lb candied mixed fruit
  • 2 cups fruit juice or sherry
  • 4 cups flour
  • 1 tbsp cinnamon
  • 2 tsp allspice
  • 2 tsp cloves
  • 1 1/2 tsp salt
  • 2 cups shortening
  • 2 cups sugar
  • 3/4 cup grape jelly
  • 12 eggs
  • 1 1/2 lb pecans
  • 1 lb blanched almonds
  • 2 tbsp vanilla

Instructions

  1. Combine fruit juice or sherry with fruit and let stand overnight
  2. Cream shortening and sugar
  3. Add jelly and beaten eggs alternately with flour and spices
  4. Add nuts and fruits, a small amount at a time, mixing well after each addition
  5. Add vanilla
  6. Bake at 300-325 degrees F for 3 hours until tested done
  7. Makes 14-15 pounts
