Curried Wild Rice

With some Asian flavor, Curried Wild Rice is a recipe with zing. If you’re scared of spice and flavor you could omit the curry powder but you’ll end up regretting it.

Recipe: Curried Wild Rice

  • 1/4 lb butter
  • 1/2 cup onion, minced
  • 1/2 cup green pepper, chopped
  • 1/2 cup celery
  • 1 can mushrooms
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp curry powder
  • 3 cups chicken broth
  • 1 cup dry wild rice or white rice

  1. Bail and drain wild rice per package instructions
  2. Saute celery, onions, peppers and mushrooms in butter until tender and lightly browned
  3. Stir in rice, seasonings and chicken broth
  4. Bake in a covered casserole for 1-1/2-2 hours at 325 degrees F
  5. More liquid may be needed during baking
