Cream Puffs

Recipe: Cream Puffs


  • 2 tbsp butter or margarine
  • 1/2 cup boiling water
  • 1/2 cup flour
  • 1/8 tsp salt
  • 2 eggs


  1. In small saucepan, melt butter in boiling water
  2. Add flour and salt all at once
  3. Stir vigorously
  4. Cook and stir until mixture forms a ball that does not separate
  5. Remove from heat, cool 5 minutes
  6. Add eggs 1 at a time, beating dough until very smooth and shiny
  7. Drop dough 3 inches apart on a lightly greased baking sheet, making 6 mounds
  8. Bake in 450 degree F oven for 15 minutes
  9. Reduce heat to 325 degrees F and bake 10 additional minutes
  10. Remove from oven and cut off tops
  11. Remove soft centers and turn oven off, return cream puffs to oven for 20 minutes
  12. (This makes them flaky and crisp)
  13. Cool on wire rack
  14. Makes 6 cream puffs
