Cream Cheese Cupcakes

  • 2 cans pie filling
  • Small vanilla wafers
  • 3 pkgs. (8 oz. ea.) cream cheese
  • 3 eggs
  • 1 tsp vanilla
  • 2/3 cup sugar
  • Put small vanilla wafer in bottom of each cupcake paper. Blend cream cheese, eggs, vanilla and sugar. Fill cupcake paper half full with cream cheese mixture. Place 1/2 tsp fruit filling in center of each. Preheat oven to 350 degrees, bake 10-15 minutes and check at 10 minutes. Should be slightly firm but not dry. Refrigerate to set.
