Recipe: Corned Beef Casserole

Corned Beef Casserole is the perfect dish for celebrating St. Patrick’s Day but this casserole, both easy and tasty, is perfect for any of Minnesota’s winter months.


  • 8 oz. noodles
  • 12 oz. can corned beef
  • 1/2-1 lb. American or Cheddar Cheese
  • 11 oz. can Cream of Chicken soup
  • 1 cup milk
  • 1 cup onion, chopped


  1. Cook noodles as directed on package.
  2. Cube the corned beef and cheese.
  3. Mix all ingredients together and put into a 2 quart casserole.
  4. Bake 1 hour at 375 degrees F.
