coffee cakeThis Coffee Cake recipe is a delectable, moist cake thanks to the addition of sour cream. Coupled with the crunchy topping, you’ll never want to put your fork down.

Recipe: Coffee Cake

Ingredients

  • Batter:
  • 1/2 cup shortening
  • 3/4 cup sugar
  • 1 tsp vanilla
  • 3 eggs
  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 pint sour cream
  • Nut mixture:
  • 6 tbsp softened margarine
  • 1 cup brown sugar
  • 2 tsp cinnamon
  • 1 cup chopped pecans

Instructions

  1. Cream shortening, sugar and vanilla
  2. Add 1 egg at a time, beating well after each egg
  3. Add dry ingredients together to the shortening, alternating with the sour cream
  4. Grease angel food cake pan
  5. Spread 1/2 in pan, then 1/2 of nut mixture
  6. Add rest of batter and remaining nut mixture on top
  7. Bake at 350 degrees F for about 50 minutes
  8. Cool inverted
