Cocunut-Pecan Frosting

  • 1 cup evaporated milk
  • 1 cup sugar
  • 3 slightly beaten egg yolks
  • 1/2 cup butter
  • 1 teaspoon vanilla
  • 1 1/3 cups coconut
  • 1 cup chopped pecans
  • Mix everything but coconut and pecans together. Cook and stir over medium heat until thickened for about 12 minutes. Add coconut and pecans. Cool until thick enough to spread, beating occasionally.
