Recipe: Chocolate Nut Cake

Ingredients

  • 1 package Devils food cake mix
  • 3 eggs, separated
  • 2/3 cup cold, unseasoned, mashed potatoes
  • 1 cup water
  • 3/4 tsp cinnamon
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg
  • 2 1/2 oz package blanched almonds

Instructions

  1. Combine cake mix with egg yolks, mashed potatoes, spices and water
  2. Blend well
  3. Beat 2 minutes or until mixture is smooth
  4. Grind or finely chop almonds
  5. Stir into batter
  6. Beat egg whites until stiff
  7. Gently fold into cake batter
  8. Grease and flour 2 9 inch round cake pans
  9. Spoon batter into pans
  10. Bake 35-40 minutes in 375 degree F oven
