Chocolate Chip and Coconut Frosting

  • 1/2 cup sugar
  • 3/4 cup evaporated milk
  • 1 6oz. pkg. chocolate chips
  • 1 tbsp. cornstarch
  • 1/3 cup water
  • 1 egg yolk, beaten
  • 2 tbsp. butter
  • 1 1/3 cups flaked coconut
  • 1 cup chopped pecans
  • Combine sugar and cornstarch. Stir in evaporated milk, water, choc. ships and egg yolk. Cook over medium heat, stirring constantly until thickened, about 8 minutes. Remove from heat. Stir in butter, coconut and pecans. Cool until of right consistency to spread.
