Choco-Marshmallow Cookies

Ingredients
  • 1 3/4 cups cake flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 cup cocoa
  • 1/2 cup shortening
  • 1 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1/4 cup milk
  • 18 marshmallows, cut in half
  • Cocoa Frosting:
  • 2 cups powdered sugar
  • 5 tbsp cocoa
  • 1/8 tsp salt
  • 3 tbsp butter
  • 4-5 tbsp light cream
Directions
  • Sift together flour, salt, baking soda and cocoa. Cream shortening and sugar, add egg, vanilla and milk, beating well. Add dry ingredients and mix. Drop by teaspoon on to greased baking sheet.
  • Bake at 350 degrees for 8 minutes, careful not to overbake. Meanwhile mix frosting ingredients together well. Remove from oven and press1/2 marshmallow, cut side down, on top of each cookie. Bake 2 minutes longer. Cool, and if desired, frost with Cocoa Frosting and top with pecan half.
