Chicken Dumpling Soup

Chicken Dumpling Soup Recipe
  • 1 lb chicken
  • 1 lb carrots
  • 8 cups of chicken broth
  • 1 tbsp. cilantro
  • 1 cup celery (optional)
  • Dumplings:
  • 1 cup flour
  • 1 tsp. baking powder
  • 1 egg
  • 1/3 cup milk
  • Bring chicken broth to a boil. Boil either the remnants of a broiler chicken, left-overs from a previous meal, or boil 1 pound of uncooked chicken until no longer pink inside. While chicken is boiling chop carrots and celery. When chicken is done remove from broth and put carrots, celery and cilantro in broth. When chicken is cool enough to handle, dice or shred chicken and return to broth. Mix the dumplings in order given. Drop by 1/4 teaspoon into soup. Cover tightly and boil 15 minutes.
