Cherry Brownie Pudding

  • 6 tbsp. butter
  • 1 cup sugar
  • 2 egg
  • 1/2 tsp. vanilla
  • 1 can cherry pie filling
  • 2 squares unsweetened chocolate (2oz. melted)
  • 1 cup flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 cup water
  • 1 tbsp lemon juice
  • Cream 4 tbsp. of butter and sugar until fluffy. Add egg yolks (save egg whites) and vanilla and beat well. Add 1 cup of cherry pie filling, melted chocolate, flour, baking powder and salt and mix well. Beat egg white until stiff and fold into mixture. Add water, lemon juice and 2 tbsp. butter to remaining pie filling in a separate bowl. Spread the cherry mixture into a greased 9 inch pan. Spoon chocolate mixture over the top and bake at 350 for 40 minutes.
