Cedric’s Casserole

What I can only assume to be an heirloom recipe, Cedric’s Casserole seems to have some German roots with the inclusion of cabbage but the usage or cream soups and the winter staple – ground beef -make it truly Minnesotan.

Recipe: Cedric’s Casserole


  • 1 medium onion, chopped
  • 3 tbsp butter
  • 1/2 lb ground beef
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 6 cups cabbage, coarsely shredded
  • 1 10-1/2 oz can cream of tomato soup


  1. Saute onions in butter, add ground beef and brown
  2. In a 2 quart baking dish, spread 3 cups cabbage
  3. Cover with meat mixture, add remaining 3 cups cabbage
  4. Pour the tomato soup on top
  5. Bake 1 hour at 350 degrees F
