Ingredients
  • Cake:
  • 2 cups sugar
  • 2 cups flour
  • 2 tsp soda
  • 2 tsp cinnamon
  • 1 1/2 cups vegetable oil
  • 3 cups grated carrots
  • 4 large eggs
  • 1 tsp almond extract
  • Frosting:
  • 4 oz. cream cheese
  • 1/4 tsp almond extract
  • 1/2 cup shortening
  • 2 cups powdered sugar
  • 1-2 tbsp milk to make creamy
Directions
  • Mix sugar, flour, soda, cinnamon, oil and carrots. Add eggs one at a time mixing after each. Add almond extract and mix. Bake in 13X9 inch pan at 350 for 30-40 minutes.
  • Mix all frosting ingredients well. When cake is cool, spread on cake.
