Ingredients

  • 1 1/2 cups Wesson cooking oil
  • 4 eggs
  • 2 cups flour
  • 2 cups sugar
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 3 cups grated carrots
  • 1/2 cup nuts
  • Frosting:
  • 1 box powdered sugar
  • 1 tsp vanilla
  • 8 oz pkg cream cheese
  • 1 stick margarine
  • 1 cup coconut (optional)
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Mix dry ingredients together, add oil and blend
  2. Add eggs, 1 at a time, and beat after each addition
  3. Add carrots and blend well
  4. May be baked in 3 layers or in an angel food or loaf style pan at 350 degrees F for 50-60 minutes
  5. Frosting:
  6. Blend cream cheese with other ingredients thoroughly and apply after cake has cooled
