Recipe: Carrot Bundt Cake

Ingredients

  • 1 12 cup salad oil
  • 2 1/2 cups sugar
  • 4 egg yolks
  • 5 tbsp hot water
  • 2 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp colves
  • 1 1/2 cup grated raw carrots
  • 1 cup chopped black walnuts
  • 4 egg whites

Instructions

  1. Cream oil and sugar well
  2. Add egg yolks, 1 at a time, beating well after each
  3. Mix in hot water
  4. Sift together flour, baking powder, baking soda, salt and spices
  5. Beat into egg mixture
  6. Stir grated carrots into batter and add nuts
  7. Beat egg whites until soft peaks form
  8. Fold into batter
  9. Pour into greased and floured 10 inch tube pan
  10. Bake at 350 degrees F for 60-70 minutes
