Caramel Popcorn

  • 4 qts freshly popped popcorn
  • 1 cup roasted peanuts (optional)
  • 1 cup packed brown sugar
  • 1/2 cup butter or margarine
  • 1/2 cup corn syrup
  • 1/2 tsp salt
  • 1/2 tsp vanilla
  • 1/2 tsp baking soda
  • Put popcorn in large shallow roasting pan. Mix with peanuts.
  • In heavy saucepan, mix sugar, butter, corn syrup and salt. Stir over medium heat until boiling. Boil 5 minutes without stirring. Remove from heat. Add vanilla and soda. Pour over popcorn. Stir until well coated. Bake at 250 degrees for 1 hour stirring frequently. Cool and break apart. Store in tightly covered container. Makes about 16 cups.
