Blueberry Muffins

  • 2 cups flour
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 1 cup blueberries, fresh or frozen, rinsed and drained
  • 1 egg, beaten
  • 1/4 cup melted shortening, slightly cooled
  • 1 cup milk
  • Mix flour, baking powder, salt and blue berries together. Mix wet ingredients together and combine with dry ingredients, careful not to over stir. Bake at 400 degrees for 25 minutes for 12 large muffins.
  • Bake at 400 degrees for 15 minutes for 24 small muffins.
