Recipe: Black Bottom Cupcakes

Ingredients

  • 8 oz cream cheese
  • 1 egg
  • 1 1/3 cup sugar
  • 1/8 tsp salt
  • 6 oz chocolate chips
  • 1 1/2 cups flour
  • 1/4 cup cocoa
  • 1 tsp baking soda
  • 1 cup water
  • 1/3 cup oil
  • 1 tbsp vinegar
  • 1 tsp vanilla

Instructions

  1. Combine in bowl the cream cheese, 1 unbeaten egg, 1/3 cup sugar and 1/8 tsp salt
  2. Beat well and add the chocolate chips
  3. Stir together and set aside
  4. Mix together in large bowl the flour, 1 cup sugar, cocoa, soda, water, oil, vinegar and vanilla
  5. Beat until well blended
  6. Fill paper muffin cups 1/3 cup full of chocolate mixture, then add generous teaspoon of the first mixture to each cupcake
  7. Bake at 350 degrees F for 30-35 minutes
  8. These need no frosting
