Beef Stroganoff

Dinner, American
  • 3 lb lean round steak, 1/4 inch thick
  • 4 tbsp. olive oil
  • 2 small cans mushrooms
  • 2 tbsp. butter
  • 2 tbsp. flour
  • 2 cups sour cream
  • 1 tsp. pepper
  • 1 tsp. paprika
  • 2 tsp. salt
  • Cut beef in 1 inch squares and cook in olive oil in covered skillet over low heat for 35 minutes or until tender. Add a little water if necessary to prevent sticking. Add mushrooms and cook for 10 minutes then move mushrooms and beef to top of double boiler. Add butter and flour to juices in pan and smooth to gravy, adding the sour cream and cooking until blended. Add seasonings, pour over beef and cook in double boiler for 10 minutes. Serve on rice, noodles or toast. Flavor improves with reheating in double boiler.
