Beef and Wild Rice Casserole

Recipe: Beef and Wild Rice Casserole

Ingredients

  • 4 cups boiling water
  • 1 cup uncooked wild rice
  • 1 can cream of mushroom soup
  • 1 can cream of celery soup
  • 1 can beef bouillon (broth)
  • 2 tsp salt
  • 1/4 tsp celery salt
  • 1/4 tsp garlic salt
  • 1/4 tsp paprika
  • 1 lb fresh mushrooms
  • 3 tbsp butter
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 2 lb lean ground beef
  • 1/2 cup slivered almonds

Instructions

  1. Pour boiling water over wild rice
  2. Cover and let stand for 15 minutes
  3. Drain, place in casserole
  4. Add soups and seasonings
  5. Mix gently
  6. Slice and saute mushrooms in 2 tablespoons butter
  7. Mix into rice
  8. Saute celery and onion in 1 tablespoon butter until limp
  9. Add to rice
  10. Brown meat
  11. Add to rice and mix
  12. Sprinkle with almonds
  13. Cover and refrigerate until baking time (may refrigerate up to 24 hours)
  14. Bake uncovered for 1 1/2 hours at 350 degrees F
