Barbecued Spareribs

   Serves 4-6
  • 1 medium onion (chopped)
  • 2 tbsp. butter
  • 2 tbsp. vinegar
  • 2 tbsp. dark brown sugar
  • 1/4 cup lemon juice
  • 1 cup catsup
  • 3 tbsp. Worcestershire sauce
  • 1/2 tbsp. prepared mustard
  • 1/2 cup water
  • 1/2 cup chopped parsley
  • 2 rack spareribs, the smaller the better
  • Salt and freshly ground pepper to taste
  • Sautee onion in butter. Add vinegar, brown sugar, lemon juice, catsup, Worcestershire, mustard, water and parsley. Simmer 1/2 hour. Preheat oven to 450 degrees.
  • Sprinkle spareribs with salt and pepper, place on rack in roasting pan and bake 30 minutes. Remove ribs. Pour off fat from pan. Return ribs without rack to pan and brush with sauce. Reduce oven heat to 300 degrees and continue baking 45 minutes. Turn spareribs as they cook and brush frequently with sauce.
