Bacon or Four Bean Salad

A four bean salad recipe with garbanzo beans, green and yellow beans, and red beans as well as bacon for a tasty twist. Use lima beans instead of yellow beans in this salad, if you like.

Bacon or Four Bean Salad

  • 2/3 cup vinegar
  • 3/4 cup sugar
  • 1 tsp salt
  • 1 can cut green beans
  • 1 can cut wax beans
  • 1 can kidney beans, drained and rinsed
  • 1 can lima beans
  • 1 medium onion, sliced
  • 1/2 tsp pepper
  • 1 medium green pepper, chopped
  • 1/3 cup salad oil
  • 1 lb. bacon cut in one inch squares
  • Blend vinegar, sugar and salt in small sauce pan. Heat until sugar is dissolved. Set aside.
  • Drain all beans and toss with onion, green pepper, vinegar mixture and pepper. Pour oil over all and toss to coat. Store in large covered container in refrigerator.
  • When ready to serve, fry bacon until crisp, drain on absorbent paper and stir bacon into the bean mixture.
