Au Grautin Potatoes

  • 5 cups diced, boiled potatoes
  • 1 pint milk
  • 2 tbsp flour
  • 2 tbsp butter or margarine
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp peppercorn1 tsp chicken bouillon
  • 3/4 tsp mustard
  • 6 oz. grated cheddar cheese or Velveeta
  • Place potatoes in mixing bowl. Combine milk and flour in blender until smooth. Melt butter in a 3 qt saucepan. Add milk mixture; stir constantly on medium heat. Add the paprika, salt, pepper, bouillon and mustard. When thickened and smooth, reduce to low heat. Add cheese. Blend until smooth. Mix lightly with potatoes, spoon into 6 or 7 lightly buttered custard cups. Set on cookie sheet. Bake with each generously garnished in additional paprika at 350 degrees for about 20-25 minutes. Serve at once.
