Applesauce Cake

Ingredients
  • Cake:
  • 2 cups sugar
  • 2 tbsp shortening
  • 2 eggs
  • 1/2 cup boiling water with
  • 2 tsp baking soda added
  • 2 cups applesauce
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp cloves
  • 1 tsp salt
  • 3 cups flour
  • 1 cup cut-up nuts
  • 1 cup raisins
  • Icing:
  • 2 cups brown sugar
  • 1 cup whipping cream
  • 1 teaspoon light corn syrup
  • 1 tsp butter
Directions
  • Cream sugar and shortening. Add eggs, beat in thoroughly. Add soda to boiling water, then add applesauce. Blend into first mixture. Soft together dry ingredients. Blend in. Add nuts and raisins. Pour into greased and floured oblong, square or layer pans. Bake at 350 degrees for 1 hour.
  • For icing place brown sugar, whipping cream and light corn syrup in saucepan. Boil until soft ball forms in water. Add butter. Beat until mixture reaches spreading consistency.
