All-Bran Muffins

All-Bran Muffins are likely the healthiest recipe for muffins I’ve come across. Full of whole grain and bran cereal, you would expect them to be dry and crumbly but the end result is surprisingly moist and pleasing.

Recipe: All-Bran Muffins

Ingredients

  • 2 cups All-Bran
  • 1 cup Shredded Wheat, crumbled
  • 1 cup boiling water
  • 1 1/2 cup sugar
  • 1/2 cup shortening
  • 2 eggs, beaten
  • 2 1/2 cups flour
  • 2 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 cups buttermilk

Instructions

  1. Combine All-Bran, shredded wheat and boiling water
  2. Add sugar, shortening and eggs
  3. Sift flour, soda, salt, add alternately with buttermilk
  4. Bake in 375 degree F oven for 20-25 minutes
  5. May add raisins
  6. Can be refrigerated for a few days
